Keto-Friendly Rack of Lamb

INGREDIENTS
2 Frenched Racks of Lamb
1 Tbsp
1 tsp Black Pepper
1 Cup Parsley, chopped
1 Cup Mint, chopped
½ Cup Chives, sliced
1 Tbsp Whole grain mustard
1 Shallot, diced
2 Clove Garlic, minced
1 Tbsp Lemon Juice
1 tsp Lemon zest
1/3 Cup Extra Virgin Olive Oil
DIRECTIONS
- Preheat oven to 350 F. While the oven is preheating, season the racks of lamb with salt and pepper.
- Heat a cast-iron skillet, over high heat on the stove. Add 2 tbsp olive oil to pan and heat.
- Sear racks of lamb in the cast iron skillet until they are golden brown in color, then transfer to a lined sheet tray.
- Once racks are seared, throw the racks of lamb in the oven for 7-10 minutes until medium-rare.
- While the lamb is in the oven, combine the remaining ingredients in a mixing bowl, and mix thoroughly.
- Once the lamb is cooked, pull out of the oven and rest for 15-30 minutes.
