The Best Instant Pot Keto Ribs Recipe

INGREDIENTS
6 Lbs Pork Ribs
For the brine (Optional)
4 Qts Water
½ Cup Salt
½ Cup Sugar (Swerve)
For the Rub
1 Tbsp Brown Sugar (Swerve)
1 Tbsp White Sugar (Swerve)
1 Tbsp Salt
1 Tbsp Paprika
1 Tbsp Black pepper
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Ground Mustard
For the BBQ Sauce
½ Cup Brown Sugar (Swerve)
½ Cup Apple Cider Vinegar
½ Cup Water
1 Can Tomato Paste
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Ground Mustard
1 tsp Salt
1 tsp Cayenne Pepper
DIRECTIONS
For the brine (Optional)
- Heat water just enough to dissolve salt and sugar into it. Submerge ribs in liquid for at least 6 hours.
For the rub
- Combine all ingredients in a mixing bowl and mix thoroughly.
For the BBQ Sauce
- Combine all ingredients in a sauce pot and simmer for 15 minutes.
For the Ribs
- Preheat oven to 225 F.
- While oven is preheating, generously apply the rib rub onto both sides of the ribs.
- Wrap each rack of ribs in aluminum foil and place on a sheet tray. Once oven is preheated, cook in oven for two hours.
- Once ribs are cooked, pull out of oven, and let rest (15-30 minutes).
- Remove ribs from foil. Apply BBQ sauce to the outside of ribs. At this point you can either place them back into the oven at 400F for ten minutes or grill them. Either way they are going to be delicious.
