Roasted Chicken – Keto Friendly Recipe

Cook Time: 2 Hours 30 Minutes
INGREDIENTS
1 5-6 lb Whole Chicken
3 tbsp Olive Oil
2 tbsp Lemon Juice
1 tsp Lemon Zest
2 tbsp Garlic
1 tbsp Thyme, chopped
1 tbsp Oregano, chopped
1 tbsp Fresh Rosemary, chopped
1 tbsp
2 tsp Ground Black Pepper
DIRECTIONS
- Preheat the oven to 400 F.
- Place all ingredients in a food processor (except chicken) and blend into a paste.
- Rub the paste all over the chicken, both inside and out.
- Roast the chicken in the oven for 75 minutes, or until the internal temperature is 165. You may have to rotate the chicken in the oven if your oven doesn’t cook evenly.
- Once chicken is roasted, let rest for 45 minutes.
