Easy low carb Organ Meat Stew

1 lb Beef heart
1 lb Beef kidney
1 lb Tripe
1 each Onion, medium diced
2 Cloves Garlic, minced
1 each Cauliflower, cut into florets (1 in)
2 Cup Mushrooms, quartered
¼ Cup Parsley, chopped
½ tsp Whole Black Peppercorn
½ tsp Salt
1 Cup Red Wine
8 Cups Beef Stock
- Start by cleaning the organs. Cut out all connective tissue, vessels, and bloodlines away from the heart and kidneys. Keep all the fat on the heart and kidneys and dice into 1 – 1 ½ inch cubes.
- Place the tripe in a pot of salted water. Bring the water to a boil, and boil for 12-15 minutes. Transfer the trip to a cutting surface.
- Scrape off any parts of the tripe that are not white. Rinse the tripe and give it one more looks over. Cut the tripe into similar shapes as the other organs.
- In an instapot or crock pot, combine all ingredients. Cook for 4-6 hours.
*you can substitute any of these organs for others. Just do not use chicken organs.
