This mousse is made with only 6 ingredients, all whisked together into a fluffy mousse.

Here is what you’ll need to make these chocolate balloon bowls:

  • Small size water balloons – make sure to buy 5-inch balloons LIKE THESE HERE, larger balloons will not work. You can buy them at any party decorations shop or online.
  • Good quality dark chocolate bar
  • Canola/Olive Oil Non-Stick Cooking Spray – spray the balloons before dipping, otherwise, the balloons will stick to the chocolate bowls. You can buy it online here on Walmart.
  • Baking sheets
  • Tray – to place the balloons after dipping.

Instructions:

  1. Break the chocolate bar into smaller pieces, put it into a bowl, and place it over a pot with simmering water until melted.

2. Whisk the chocolate, take the bowl off the heat and let it cool for 10 minutes.

3. Meanwhile, begin by washing the balloons, then blow up your balloons and put them aside. 

4. Line a tray with a baking sheet.

5. To create a chocolate balloon bowl, hold the knotted end of the balloon and dip it into the melted chocolate. Make sure to spray each balloon before dipping. Then, stand the dipped balloon on the tray and hold the balloon for a few seconds until it is stable.

6. After dipping the ballon in the chocolate, you can also dip it into ground pistachios, hazelnuts, almonds, or even sprinkles to add extra texture and flavor to it. 

7. Dip the remaining balloons and let them chill for at least 15 minutes, then put them in the fridge for 15-30 minutes until solid.

When is it freshly made, the pistachio paste will have a light green color, but will naturally darken over time.

Homemade Pistachio Paste Recipe

Ingredients

2 ¼ Cups of Raw Pistachios, shelled (250 grams)

2 Tablespoons Water

½ Cup Sugar

⅔ Cup Almond Flour

A few drops of Almond Extract

Instructions

  1. Put some water in a pan or pot and bring it to a boil.
  2. Add the pistachios to boiling water and cook for 2 minutes, strain them, and put them aside.
  3. To remove the brown skin off the pistachios, lay out a clean towel, place the pistachios in the middle, fold the towel in half and gently rub the pistachio with the towel until all peels are removed.
  4. Toast the Pistachios in a preheated oven for 5 minutes to get more roasted pistachio flavor (optional).
  5. Then transfer the pistachios to a large mixing bowl.
  6. In a small pan, boil together 2 tablespoons of water and sugar. Once the temperature reaches 245 °F, pour the hot syrup on the pistachios and keep stirring until the syrup crystallizes.
  7. Move the pistachios into a powerful food processor, add almond flour and almond extract. Another option is to blend it all together with a hand blender.
  8. Process everything together for a few minutes until you get a smooth paste texture.
  9. If the paste is too thick, add a little bit of water to get things go smoother.

How to store your homemade pistachio paste?

You can store it in the fridge for 2 weeks or in the freezer for up to 3 months.

Here is what you’ll need to make this delicious pistachio mousse:

Ingredients

1½ Cups Heavy Whipping Cream (250 ml)

1 Bar Cream Cheese (such as Philadelphia Original)

2/3 Cup Powdered Sugar

½ Cup Pistachio Paste

1 Tsp Vanilla Extract

1 pinch sea salt

1/2 Cup Roasted Pistachios (for decoration)

  1. In a mixing bowl, whisk together whipping cream and cream cheese until you get a smooth mixture.

2. Add powdered sugar, pistachio paste, vanilla extract, sea salt, and whisk together until you get a nice and smooth mass.
