Mini cheesecake bites with whipped cream, cherries and chocolate sprinkles. Need I say more? Refrigerated pie crust will save you time when making these. The chocolate cheesecake filling is so easy to make and rich in flavor, thanks to the melted chocolate chips. These only need to bake for 14-15 minutes before serving.
If you want to make these even more festive, you could replace the cherries with egg candies.

Cookie bars are always a crowd pleaser, and they can easily be sliced into bite-sized pieces. It’s easy to make these from scratch using basic pantry ingredients. But the addition of Easter M&Ms and sprinkles adds fun colors to celebrate the season.

16. Mini Chocolate Fudge Pies
Bite-sized fudge pies with a buttery crust never last long in my house. You’ll make the dough yourself by mixing the butter, sugar, flour and salt together with an electric mixer. Form the dough into a large ball and then divide into 24 smaller balls before pushing them into your greased muffin cup.
Bake for 10 minutes, press a spoon into the cups and put back in the oven for a few minutes.
Melt the chocolate and milk together in a microwaveable bowl, stir in the vanilla and fold together. Fill the cups with your fudge, put some shaved chocolate on top and then refrigerate to allow the pies to cool before serving.
17. Rainbow Funfetti Cookies

Sift well with baking powder, flour and salt, and add to the wet mixture before adding sprinkles and the mix. Divide the dough evenly at a ¼” thickness, place on a piece of lightly floured parchment paper and place on a baking sheet. Bake for 7 to 10 minutes and allow to cool before serving.
18. Peanut Butter Haystacks with Easter Eggs
Grab your muffin tin, peanut butter, white chocolate wafers, chocolate Easter eggs and chow mein noodles. Melt the chocolate and stir with powdered sugar until blended well.
You’ll mix in the peanut butter and noodles together before pressing into each muffin tin to create the “basket.”
Place your eggs in the center of the basket, refrigerate and allow to harden in the refrigerator before serving.
You can even make these adorable egg haystacks a few days before Easter.
