It’s hard to beat a plate full of crispy home fries, especially for breakfast. But did you know that some of the best home fries recipes aren’t actually made with potatoes? I’m going to share 21+ of my favorite recipes that you can try this weekend.
1. Zucchini Home Fries
These zucchini fries are perfect any time of day. The best part? They’re easy to make and 100% vegan.
Just slice a medium or small zucchini into spears, and then dip each spear in a homemade spiced batter and flour mixture.
You can deep fry your home fries, you can pop them in the oven, or you can use an air fryer. Serve with your favorite dipping sauce, and enjoy!
2. Baked Root Veggie Fries
These root veggie fries are loaded with flavor and are the perfect addition to your breakfast or lunch.
Because these fries are made from parsnips, beets and carrots, they’re so colorful (and healthy). Just cut your veggies into strips, toss in oil and cornstarch and bake.
These fries are so good on their own, you don’t even need dipping sauce.

3. Veggie Curly Fries
These veggie curly fries are so delicious, and the recipe is so flexible. You can use whatever vegetables you want: zucchini, beets, butternut squash, etc.
Use a spiralizer to get that curly fry shape, and then toss your veggies in a homemade batter of flour, water, egg and spices (including chipotle powder).
If you add zucchini to your mix, let them rest for about 30 minutes to allow the water to seep out before coating and frying.
You can cook your fries in a cast iron pan, or you can use an air fryer.
4. Parmesan Garlic Veggie Fries
Here’s one of my favorite home fries recipes that doesn’t use potatoes. It’s such a simple recipe, but you can use any mix of veggies you want. My favorite options are:
- Carrots
- Parsnips
- Rutabaga
- Green beans
- Turnips
Stick to firmer veggies that aren’t full of moisture to make your fries extra crispy.
Toss your vegetables with olive oil, spices and Parmesan cheese. Spread on a baking sheet, and bake for 18-20 minutes.
You can eat these with breakfast, lunch or dinner. There’s never a wrong time for veggie fries.
5. Crispy Sweet Potato Home Fries
Ohh I love fried sweet potatoes! I know sweet potatoes are still potatoes technically, but people expect regular ones! These come out caramelized, slightly smoky, and perfect with paprika and garlic.
6. Harvest Vegetable Hash
This harvest vegetable hash is the perfect side dish for fall. It’s Autoimmune Protocol (AIP) friendly and Paleo.
While the recipe is versatile, I love the original ingredients:
- Sweet potato
- Carrots
- Brussels sprouts
- Red onion
- Parsnip
- Bacon
- Rosemary, sage and thyme
You can use butternut squash instead of sweet potatoes if you want. The bacon adds fat and flavor, but you can omit this as well if you want a vegetarian version.
You’ll start by roasting your veggies and baking the bacon separately. Then, toss your ingredients together and enjoy.
7. Roasted Vegetable Hash
This hash is baked to perfection and takes no time at all to prep. The key to making this hash crispy is to shred your veggies using a grater or shredder.
You can use any mix of vegetables you want, but this recipe calls for:
- Brussels sprouts
- Kale
- Broccoli
- Carrots
- Onion
Toss with olive oil, salt and pepper before baking for about 20 minutes.
If you want to change things up, you can add feta cheese to your hash after it’s cooked.
8. Crispy Air Fryer Blooming Onion With Perfect Golden Crunch
This recipe is totally amazing! If you like onions, you are going to love this dish! I love how crispy this gets without the mess of deep frying. The air fryer gives you that perfect golden crunch on the outside while the onion stays tender and pull-apart inside. And it looks just so good, perfect for any festive gathering!
9. Sweet Potato Hash
Sweet potatoes are not like a typical russet potato, so they fit on this list. And after you try this recipe, you’ll definitely agree.
It’s a tasty mix of sweet potatoes, onions, red bell peppers, garlic, spices and green onions. You’ll first need to precook the sweet potatoes before chopping them into cubes.
Then, saute your vegetables in olive oil over medium heat, add in your sweet potatoes, and serve.
Want to mix things up and make this home fries recipe even better? Try adding:

- Mushrooms
- Kale
- Corn

- Exotic spices
We love to serve this hash with over-easy eggs on top, but you can serve them however you want.
10. Honey Baked Butternut Squash Fries
One of my favorite home fries recipes for fall and when I’m too lazy to cook something more complicated.
These fries have just a hint of sweetness, thanks to the honey granules, but the rest of the recipe is super simple. You’ll just need some olive oil, salt, pepper and thyme leaves (along with the squash and honey).
Just toss your ingredients together, and bake for 20-30 minutes. If you prefer, you can cook these in an air fryer, but I recommend doing it in batches. You want ample space between each fry.
We love to eat these with breakfast, but they’re a great side dish for any meal.

11. Pumpkin Fries
I’ve found so many recipes for squash-based home fries, but rarely do they call for pumpkin. That’s why I was so happy when I found this recipe and certainly had to include it on this list.
These savory home fries are made with fresh pumpkin (use the kind for pies), olive oil, cumin, turmeric, paprika, salt and pepper.
Just slice your pumpkin, toss it with oil and spices, and pop it in the air fryer for 15 minutes.
Don’t forget to save the seeds you scooped out! Clean them and roast them to enjoy your own homemade roasted pepitas.
12. Cauliflower Hashbrowns
These hashbrowns are divine, and they’re made from an unexpected ingredient: cauliflower.
To save time, I recommend using frozen cauliflower rice, but you can shred a head of fresh cauliflower if you have the time.
These hashbrowns are cooked in a batter with cheddar cheese, Parmesan cheese, garlic, onion, paprika and salt to make them extra flavorful.
They’re baked to gooey, crispy perfection in the oven, or you can use an air fryer instead.
13. Butternut Squash Hash with Apples, Sausage and Kale
Breakfast home fries recipes are some of my favorites, and this variation from The Roasted Root calls for you to heat a large saute pan on medium-high and add butternut squash and yellow onion to the pan.
Saute for about 8 minutes before adding in your chopped apples, salt and apple cider.
Move your veggies to one side after five minutes of cooking to add your turkey sausage. In just a few more steps, you’ll add your chopped kale and serve it with fried eggs on top of the hash.
14. Fried Pickles
For some people this one is surprising, but yes, fried pickles are actually a thing. They’re crunchy, salty, and tangy in the best way, and once you try them, you’ll get why people are obsessed. To make them, all you’ll need is sliced pickles, flour, milk, eggs, a little baking powder, simple seasonings like salt, pepper, garlic powder, onion powder, and paprika, plus oil for frying.

15. Sweet Potato, White Bean & Rainbow Chard Hash
If you want a dish that makes a colorful statement the moment you serve it, this rainbow chard hash is one of the best options on the list. Ideal for anyone who is vegan or vegetarian, you’ll need to pick up:
- Olive oil
- Sweet potatoes, sweet bell peppers, onions, jalapeno and garlic
- Rosemary, sage, cumin seeds, coriander, smoked paprika, salt and pepper
- Chard, cabbage, chives, parsley
- Sherry vinegar
- White beans
You’ll also have the option to add Parmigiano cheese. You’ll be blown away by how flavorful this dish is.
16. Crispy Eggplant Fries
Fried eggplant is special because once it’s cooked, it turns creamy on the inside with this rich, almost buttery flavor that I personally just really love. These air fryer eggplant fries hit that perfect balance of crispy outside, tender inside, and feel indulgent without being heavy.
17. Roasted Carrot, Bacon & Kale Hash
You’ll need thirty minutes total cooking time for this dish, which requires a pound of carrots, avocado oil, nitrate-free bacon, kale, salt, pepper, paprika, green onions and eggs. Start by preheating your oven to 450℉.
You’ll then line a baking sheet and spread the following ingredients out in a single layer: carrots, cooking fat, paprika, salt and pepper.
While your baking sheet stays in the oven for 15 to 20 minutes, you’ll cut your bacon into bite-sized pieces and cook them in a deep skillet. You’ll eventually add your other ingredients, fry eggs and top with green onions.
18. Yam, Celery Root and Bacon Hash
Fill a large pot of water with just enough water to hold your one large chopped yam. Add salt to the water and cook for 12 – 15 minutes until tender. While cooking, start on your bacon, which you’ll cook in a large saute pan.
Saute your onions in the remaining bacon grease, add celeriac and cook until soft.
Add your yams and garlic to the mix and cook until the yams are lightly browned. Season with salt and pepper, mix in your bacon and paprika and then top with parsley before serving.
19. Radish Hash Browns
Radishes make for great home fries recipes, and they offer the golden, crispy exterior that people associate with traditional hash browns. You’ll only need a pound of shredded radishes, four eggs, parmesan cheese, garlic powder, onion powder and salt for this recipe.
Combine all of your ingredients.
Evenly spread the ingredients on a preheated skillet. Remove when both sides are golden brown.
20. Apple Brussel Sprout Hash
A dish that’s ready in just ten minutes? Eat this hash for breakfast, lunch or dinner. Start by shredding Brussels sprouts in your food processor, then cooking them in a hot skillet. In the meantime, peel and chop a green apple.
After a few minutes, add the following to your skillet with the Brussels sprouts:
- Chopped green apple
- Balsamic vinegar
- Garlic powder
- Salt
Add your favorite chopped nuts in last and stir well before serving.

21. Radish Hash with Fennel Seed Veggie Sausage
Who says crispy home fries can’t be made with a delish radish recipe? You enjoy a similar taste to traditional hash browns without the excess carbs. And it takes just 15 minutes in total to make this dish. You’ll need the following ingredients:
- Olive oil
- Yellow onion
- Garlic cloves
- Red radish
- Salt and pepper
- Lemon juice
- Spicy sausage
For this recipe, the author chose a spicy veggie sausage, but you can easily swap it out for real sausage if you cook it properly.
