Easy Mexican Inspired Bean Salad Bowl

Ingredients

  • 1 can kidney beans, rinsed and drained
  • 1 can cannellini beans, rinsed and drained
  • 1 cup corn (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped red onion
  • 1 avocado, diced
  • ½ cup chopped fresh cilantro

Dressing

  • 2-3 tbsp hot sauce
  • 1 tbsp olive oil
  • 1 tsp maple syrup or honey
  • 2 tbsp lime juice
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp salt (or to taste)

Instructions

  • Drain and rinse the beans, then add to a large bowl.
  • Chop the vegetables and add them in with the beans.
  • Whisk all dressing ingredients together until smooth.
  • Pour the dressing over the salad and toss well.
  • Fold in avocado and cilantro right before serving.
  • Let sit for 10–15 minutes for flavors to blend. Enjoy!
