Toast your bread slices until they’re golden and crisp.
Spread a thin layer of mayonnaise over each slice.
Heat a little olive oil in a pan, add the zucchini slices, and season with salt and paprika. Cook until soft and lightly browned, then layer them on top of the bread.
In the same pan, fry your eggs sunny side up. Place one egg on each bruschetta.
Scatter fresh za’atar leaves over the top, then season with salt and black pepper.
Add a handful of halved cherry tomatoes (or your favorite chopped veggies) on the side.
Serve immediately while everything is warm and fresh.
