Breakfast Bruschetta with Zucchini, Fried Eggs and Za'atar

Ingredients

  • 2 slices of good quality bread sourdough or rustic loaf works best
  • 1 tablespoon mayonnaise or more, to taste
  • 1 medium zucchini sliced lengthwise
  • 2 large eggs
  • 1 tablespoon olive oil for frying
  • 1/4 teaspoon paprika
  • Small handful of fresh za’atar leaves
  • Freshly ground black pepper to taste
  • Pinch of salt
  • 4 cherry tomatoes or any fresh veggies you like, for the side

Instructions

  • Toast your bread slices until they’re golden and crisp.
  • Spread a thin layer of mayonnaise over each slice.
  • Heat a little olive oil in a pan, add the zucchini slices, and season with salt and paprika. Cook until soft and lightly browned, then layer them on top of the bread.
  • In the same pan, fry your eggs sunny side up. Place one egg on each bruschetta.
  • Scatter fresh za’atar leaves over the top, then season with salt and black pepper.
  • Add a handful of halved cherry tomatoes (or your favorite chopped veggies) on the side.
  • Serve immediately while everything is warm and fresh.
